Cinnamon Griddle Cakes With Icing

Like cinnamon rolls, but much easier. Kind of a combination of a heavier pancake or biscuit with powdered sugar icing. Not something I'd feed the kids everyday, but boy did they love them. Refrigerated the leftover pancakes and icing and they were just as good the second day. I use Vietnamese cinnamon which is strong and did not find 1 T overwhelming in the pancakes. A drizzle of icing is all you need, it's obviously very sweet.
Ingredients:
1 1/2 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
4 teaspoons baking powder
1 tablespoon ground cinnamon
2 eggs, beaten
1 cup milk
2 tablespoons corn syrup
1/4 cup butter, melted
1 tablespoon vanilla extract
2 cups powdered sugar
2 teaspoons vanilla extract
1 tablespoon milk
Directions:
1. In a medium bowl, combine flour, sugar, salt, baking powder and cinnamon.
2. In a separate large bowl, beat together eggs, milk, corn syrup, butter and vanilla extract. Stir in the flour mixture.
3. Heat a lightly oiled griddle over medium low heat. Scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
4. While pancakes are cooking, mix the icing. Combine powdered sugar, vanilla extract, and enough milk to make a liquid frosting. Drizzle icing on hot pancakes before serving.
