My niece is a chef and shared this wonderful cinnamon bread recipe with me. She served it during a visit to her home and we fell in love with the texture and flavor. Now I'm lucky enough to also get to smell it bake. Read more . Wonderful as a side with breakfast, during a coffee break, or just alone!
Ingredients:
1/4 cup vegetable oil
1 1/2 cups granulated sugar
1 jumbo egg (or large)
1 tsp baking soda
2 cups all purpose flour
1/2 tsp salt
1 cup buttermilk (you can use whole milk)
1 tsp cinnamon
Directions:
1. Preheat oven to 325 degrees. Grease 9 x 5 loaf pan.
2. Mix all ingredients with electric mixer on low speed until blended. Do not overbeat, but mix well.
3. Pour into loaf pan.
4. Bake for 50 to 60 minutes until toothpick comes out almost clean - we like ours a bit moist.
5. Cool on wire rack for 15 minutes then remove from loaf pan.
6. Completely cool before slicing.
7. Store in air tight container to maintain freshness.
