Cinnamon-Applesauce Muffins

Ingredients:
1 3/4 cups self-rising flour
1/2 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 cup unsweetened applesauce
1/2 cup fat-free milk
2 tablespoons vegetable oil
1 egg, lightly beaten
vegetable cooking spray
Directions:
1. Combine first 3 ingredients in a medium bowl. Make a well in center of mixture. Combine applesauce and next 3 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
2. Spoon batter evenly into muffin pans coated with cooking spray, filling three-fourths full. Bake at 400° for 15 minutes or until golden. Remove from pans immediately.
