This is the end result of me deciding to combine about 5 recipes. It is a very interesting bread, very soft on the inside with a nice crunchy crust. I love it smothered in butter
Ingredients:
2 cups plain flour
1 cup sugar (white)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon (add to your own taste, i personally add closer to a full table spoon)
1 teaspoon salt (optional)
1 cup milk
1/4 cup vegetable oil
2 eggs
1 teaspoon vanilla
2 tablespoons butter
1 tablespoon cinnamon
1 cup raisins (other dried fruit)
1 cup nuts, of choice
Directions:
1. Combine dry ingredients and set aside.
2. Mix oil, milk, eggs and vanilla.
3. Add wet mix to the dry mix.
4. Mix until JUST combined, if batter is lumpy that is FINE.
5. Cut up butter and toss with cinnamon.
6. Fold butter into batter.
7. If adding something in do at this point.
8. Pour into your baking vassal, (I use an old corny ware dish, a deep 9x9 should be fine).
9. Bake at 350 for 45 or until the tooth pick comes out clean.
