Cindys Stuffed Baguette Loaf

This is a good filled loaf of bread that I got from my sister, Cindy. I love the crunch of the nuts, and the cheesey flavor. Mix up the nut types and cheeses to whatever you like - I've used asiago and parmesan, some spicier cheese like pepper-jack, etc. Read more ...it's a very adaptible recipe, though this original recipe is probably my favorite filling.
Ingredients:
1 cup grated swiss cheese
1 cup freshly ground parmesan cheese
1 stick butter, at room temperature
3/4 cup chopped pistachios
1 loaf baguette bread (from the grocer or make your own -i prefer whole wheat or any grainy type)

Directions:
1. In a medium-size bowl or the bowl of a food processor, mix the cheeses and butter until they are well blended. (If you use a food processor, process for about 30 seconds).
2. The mixture should be a thick paste; if too thick, add a little cream.
3. Stir in the pistachio nuts.
4. Slice the bread loagf crosswise and remove about half of he soft insides.
5. Stuff the cavity of the baguette with the cheesy nut mixture.
6. Re-shape the bread into a loaf and wrap in foil or plastic wrap, then chill.
7. When ready to serve, slice the bread into 1/2-inch slices. If you prefer, this is good warmed up too. Bake at 375 degrees for about 15 minutes, depending on the thickness of your loaf of bread.
