Cime Di Rapa Aka Mustard Greens

An Italian way of serving one of the great Southern favorites.
Ingredients:
2lbs mustard greens, roughly chopped
4 tbsp olive oil
2 cloves of garlic, sliced
1 finely chopped chili pepper or some cayenne pepper (use an amount that you like.)
juice of half a lemon
salt and pepper
Directions:
1. Bring a large pot of water to boil and add a good handful of salt.
2. Drop in the greens and when the pots returns to the boil, let it boil another 3 to 4 minutes.
3. (This has to go pretty quickly.) Heat a frying pan over medium high heat and add the olive oil, garlic and chili pepper or cayenne.
4. Drain the greens thoroughly shaking off as much of the water as possible.
5. Put into the pan with the oil and mix thoroughly until vegetables are covered with the oil and other ingredients.
6. Turn off the heat and add the lemon juice.
7. Correct salt and pepper and serve.
