Cilantro Tomato Relish

This simple relish will enliven your grilled meats, burgers, and sandwiches!
Ingredients:
1 1/2 lbs plum tomatoes, cored and roughly chopped
1/2 red bell pepper, seeded, stemmed, and minced
2 teaspoons ground cumin
1 tablespoon minced onion
salt, to taste
cayenne pepper, to taste
1 lime, juice of
2 tablespoons cilantro, chopped
Directions:
1. Combine tomatoes, bell pepper, cumin, onion, salt, cayenne pepper, and lime juice. Taste and adjust seasonings if needed.
2. Just before serving, add cilantro.
