Cilantro Rice Salad

Nice change of pace from potato or macaroni salad. Cooling with the lime dressing and cilantro
Ingredients:
1/3 to 1/2 cup of vegetable oil
1/3 cup of lime juice, fresh squeezed
grated lime zest
1/2 tsp of salt
1/2 tsp of pepper
1/4 tsp of garlic powder
1/2 tsp of cumin
1/3 cup of thinly sliced gren onions
3 cups of cooked long grain white rice at room temperature
1/2 cup of minced red bell pepper
1/2 cup of minced yellow bell pepper
(can add one minced pickled jalapeno if desired for heat)
1/2 cup of diced peeled cucumber
1/2 cup diced tomato flesh (seeded and peeled)
1/3 cup of minced fresh cilantro
Directions:
1. Whisk lime juice, oil, zest and spices together.
2. Pour over cooled rice.
3. Toss with chopped vegetables and cilantro.
4. Chill and serve.
5. Adjust seasoning just before serving with a squeeze of fresh lime wedges.
6. This is a good side dish with grilled foods.
