Cilantro Rice

Excellent side to any tex-mex meal. Mouth-cleansing and spicy, but not toooooo spicy.
Ingredients:
2/3 cup fresh cilantro, loosely packed
1/3 cup chopped onion
1/4 cup chopped scallion
1 jalapeno (or to taste)
1 tablespoon lime juice
1 teaspoon olive oil
2 -3 cups cooked rice
Directions:
1. Mix all above ingredients except rice in food processor or blender.
2. Combine with cooked warm rice.
3. And kosher salt to taste.
