Came up with this the other day. Feel free to tweak it and give me some criticism.
Ingredients:
1/2 bunch cilantro
1 scallion stalk, chopped
1/3 c roasted, unsalted peanuts
1/4 c parmesan, coarsely chopped
2 thai bird chilis
juice from 1/2 a lime
1/2 tsp kosher salt
1/2 tsp black pepper, ground
1/2 c extra virgin olive oil
Directions:
1. Combine cilantro, scallion, peanuts, chilis, and lime juice in a blender or food processor until coarse.
2. Add parmesan, salt and pepper and combine while slowly pouring in olive oil.
