This pesto is a suggested variation on a traditional basil pesto taken from Diana Shaw's Essential Vegetarian. It makes for a nice change, and is very versatile.
Ingredients:
4 cloves garlic
2 tablespoons pine nuts, toasted
2 cups packed fresh cilantro
3 tablespoons extra virgin olive oil
2 tablespoons grated asiago cheese
Directions:
1. Place everything in a food processor, and pulse to combine, then process fully to make a smooth paste.
