I love making Mexican food but GOTTA have a lighter veggie side to serve with the heavy food. This dressing is really simple but wonderful served over romaine, lots of fresh veggies, and a little homemade pico de gallo!
Ingredients:
2 tablespoons olive oil
1/2 lime, juiced
1/2 bunch fresh cilantro (leaves only)
2 garlic cloves, crushed
1/4 cup water
1/4 teaspoon kosher salt
Directions:
1. Mix altogether in a blender.
