Cilantro-Lemon Grilled Chicken

Marinating the chicken overnight infuses it with the tangy flavor of the citrus-yogurt marinade.
Ingredients:
1/3 cup plain fat-free yogurt
1/4 cup chopped fresh cilantro
3 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon grated fresh lemon rind
2 teaspoons fresh lemon juice
4 (6-ounce) skinless, boneless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground cumin
cooking spray
Directions:
1. Combine first 6 ingredients in a large zip-top plastic bag; add chicken, and seal. Marinate in refrigerator at least 8 hours or overnight, turning bag occasionally.
2. Preheat grill.
3. Remove chicken from bag; discard marinade. Sprinkle chicken evenly with salt, pepper, and cumin. Place chicken on grill rack coated with cooking spray; grill 6 minutes on each side or until done.
