Chupe De Mani (Bolivian Peanut Soup)

An easy, light soup for lunch or dinner,
Ingredients:
4 cups beef broth
1 medium onion, chopped
1 tablespoon parsley, chopped
1 tablespoon oil
1 small tomato, chopped
1/2 cup peas
1 carrot, chopped
1/2 cup peanut butter
Directions:
1. Sauté onion and parsley in oil until brown.
2. Add remaining ingredients and simmer for at least 30 minutes or until carrots are done.
