Chunky Monkey Banana Bread

The nutty flavor of the brown rice flour is killer with over-ripe bananas, dark chocolate chips, cacao nibs, and a handful of walnuts. Super moist, super yum, easy to bake, AND gluten-free!
Ingredients:
2 1/2 cups brown rice flour
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1/4 teaspoon sea salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts
2 eggs, beaten
6 ripe bananas, mashed
1/3 cup coconut sugar
1 teaspoon vanilla extract 1/4 cup melted coconut oil
optional additions
1/2 cup walnuts
1/3 cup cacao nibs
1/3 cup dark chocolate chips
Directions:
1. Preheat oven to 350 degrees and spray bread pan with coconut oil spray.
2. Mix rice flour, baking soda, sea salt, baking powder, cinnamon, nutmeg and chopped pecans together. See Photo
3. In a separate bowl, mix the eggs, mashed bananas, honey, vanilla, and melted coconut oil cream. See Photo
4. Add banana mixture to dry mix.
5. Pour batter into your bread pan. See Photo
6. Bake for 50-60 minutes, or until a toothpick comes out clean.
