From the American Diabetes Association. lobster, garlic, low-fat mayonnaise, celery, scallions, lemon juice, romaine lettuce, whole-wheat pita bread halves or whole-grain hamburger rolls cvt
Ingredients:
1 1/2 lb cooked lobster meat
3 garlic cloves, minced
1/2 cup fat-free mayonnaise
1/2 cup sliced celery
1/2 cup minced scallions
1 tbsp lemon juice
1 cup shredded romaine lettuce
6 whole wheat pita breads (18042) or whole-grain hamburger rolls
Directions:
1. Mix together the cooked lobster with all ingredients except the lettuce and bread. If using pita bread, stuff the mixture and the lettuce into the pocket and serve.
2. If using hamburger rolls, scoop out some of the bread on one side of each roll to form a pocket. Place shredded lettuce in the hole. Pile on the lobster salad and top with remaining roll half.
3. Variation: Cooked jumbo shrimp in place of the lobster.
