Doesn't Sound Like Cucumbers and Mango's Go Together But This Is A Nice Summer Salsa and My Friends Always Ask for the Recipe, So It Must Be Good! It's Simply Just Light and Naturally Flavorful.
Ingredients:
3 medium cucumbers (european seedless cukes work well too) peeled, seeded and coarsely chopped
1 medium mango coarsely chopped
1 cup frozen corn thawed
1 medium sweet red bell pepper coarsely chopped
1 small red onion coarsely chopped
1 jalapeno seeded and finely chopped
3 garlic cloves minced
juice from 1/2 of 1 large lemon
1/3 cup coarsely chopped cilantro
Directions:
1. Prepare As Above and Toss Gently Together and Serve in A Nice Colorful Glass Bowl with Some Lightly Salted Crispy Pita Chips or Tortilla Chips. Is Great Next to Some Grilled Chicken or Fish As Well.
