Chunky Cinnamon & Sugar Applesauce

This tastes so much better than applesauce from a jar! I usually add a little water to the apples to start the cooking process; then uncover and let the liquid reduce down to a syrup-y consistency. Also a good topper over vanilla ice cream.
Ingredients:
8 cups chopped, peeled tart cooking apples
1/2 cup packed brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
Directions:
1. Combine all the ingredients.
2. Cover and cook over medium-low heat for 30 to 40 minutes or until apples are tender, stirring occasionally.
3. Leave chunky (my preference) or mash apples (a potato masher works well) until sauce is desired consistency.
4. Serve warm or cold.
