The batter looks wierd when you mix it all up because of the big chunks of apple. But it turns out wonderful in the end. I've made it twice so far and both times it just dissapeared.
Ingredients:
1/2 cup butter, softened (1 stick)
2 cups sugar
1/2 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 1/2 teaspoons cinnamon
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
6 cups chopped peeled tart apples
1/2 cup packed brown sugar
1/4 cup butter, melted (1/2 stick)
1/2 cup heavy whipping cream
Directions:
1. This came from August/September issue of Taste of Home. it's delish! I have made it once and just bought all the stuff to make more! Don't let the chunkiness of the batter fool you. it.
2. In a large bowl cream the butter, sugar, and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, alt, and baking soda; gradually add to creamed mixture and mix well.( batter will be stiff) stir in apples until well combined.
3. Spread into greased, 13x9 pan. Bake 350 for 40-45 minute until top is lightly browned. Cool 30 min before serving.
4. To make sauce, in small saucepan, combine butter and sugar. Cook over medium heat until butter is melted. gradually add cream. Bring to a slow boil over med. heat, stirring constantly. Remove from heat. Serve w/ cake! Garnish with slivered almonds if desired :).
