Christmas Rum Pie

This is my absolute favorite christmas dessert! It's sort of like an eggnog pie. My mom makes it every year. I've adjusted the instructions to make it easier.
Ingredients:
1 tablespoon unflavored gelatin
1/4 cup cold water
1/2 cup sugar
1/2 teaspoon salt
1 1/4 cups milk
3 egg yolks
2 teaspoons rum extract
1 cup cream, whipped or 1 cup cool whip
3 egg whites
1/2 cup sugar
1/4 teaspoon cream of tartar
2 pre baked pie crusts
Directions:
1. Dissolve gelatin in cold water.
2. Cook Sugar, salt and milk over low heat just until it coats a spoon. Mixture will be thin.
3. Pour over slightly beaten egg yolk, add gelatin, mix well and cool by placing in cold water bath.
4. While the mixture is cooling, beat egg whites with sugar and cream of tartar until stiff.
5. After mixture has cooled, add rum extract, cool whip and beaten egg whites, stirring thoroughly. Pour into prebaked pie shells.
6. Sprinkle with nutmeg and refrigerate.
