Ingredients:
9 -10 lbs prime ribs (no bones)
sea salt
fresh cracked pepper
garlic
Directions:
1. remove prime rib from cooler 1 1/2 hours before cooking
2. place prime rib fat side up on a roasting rack.
3. season with sea salt, fresh cracked pepper and garlic.
4. insert meat thomemeter into center of prime rib.
5. sear 450 for 16 minutes or 8 minute per side.
6. reduce heat to 300 degrees.
7. cook until internal tempereatue reaches 125 degrees or.
8. 2 - 2/12 hours for rare or 18-20 min per pound.
9. remove from oven.
10. meat will continue cooking during resting phase.
11. let stand 25 minuets before carving.
12. serve with horseradish sauce.
