Christmas Limas With Pesto Bulger

Christmas Limas are dappled red with pale green and a nutty flavor
Ingredients:
1 1/3 cups vegetable broth
2/3 cup bulgur
1 medium sweet red pepper
1/4 cup thinly sliced green onion
1/3 cup pesto sauce
2 cups cooked christmas lima beans or 2 cups pinto beans or 2 cups cranberry beans
fresh ground pepper
toasted bread, slices
Directions:
1. In medium saucepan bring broth to a boil.
2. Add the bulgur; return to boiling.
3. Reduce and simmer for 10 minutes, covered.
4. Remove from heat.
5. Stir in the remaining ingredients.
6. Season with the pepper.
7. Serve on toasted bread slices.
