Christmas Ice Cream Pudding

I made this for a few Christmas's years ago.....My Late Father loved this made for Christmas Day, and then I lost the recipe and could never find anything close to it again. Well luck has it I think I have found it again, and if it is not the original it is so very close. Although my DD found a similar recipe a few years back and makes her's every year now....... So there might be a fight as to which recipe is used this year.... better still maybe 2 ice-cream pudd's! This pudding is a fantastic alternative to hot Christmas pudding here when it is quite hot on Christmas Day, of course my father necer used to be able to choose between the traditional pudding or ice- cream.......... So he always had both!!!! One thing I do remember was I once made it using a light and creamy ice-cream and it did not set well at all. So don't be tempted to use an ice-cream with less fat and cream!
Ingredients:
250 g fruit mincemeat
1/2 cup glace pineapple, chopped
1/2 cup blanched almond, halved
1/2 cup glace cherries, chopped
3 -4 tablespoons brandy
125 g cream cheese
1 liter chocolate ice cream, softened
2 teaspoons cinnamon
1/2 cup thickened cream, lightly whipped
thickened cream, extra, whipped, for serving
chocolate curls, for serving
glace fruit, for serving
Directions:
1. Place the fruit mince, pineapple, almonds and cherries in a bowl and spoon over brandy. Allow the fruit to stand for 1 hour.
2. Leave ice-cream at room temp to soften just slightly.
3. Beat the cream cheese until smooth. Fold through the softened ice cream into cream cheese, then fold in fruit mixture, cinnamon and whipped cream.
4. Note: I line my bowl with glad wrap for easier removal, but it does not give a completely smooth effect.
5. Pour ice-cream into a wet 5 cup pudding basin or fancy mould and freeze overnight.
6. To serve: Invert ice-cream onto a serving plate. Cover with a hot wet cloth to loosen, then carefully remove. Garnish with extra whipped cream, chocolate curls and glace fruits just before serving.
