Christmas Cream Corn

Ingredients:
2 (1 lb) bags of frozen corn, thawed
1 tb olive oil
6 strips thick-cut bacon; cut into small pieces
1/2 cup diced yellow onion
1 tb minced garlic
1/2 cup chicken broth
1-1/2 cups heavy whipping cream
4 tb butter
Directions:
1. In a large skillet on medium-high heat, saute bacon pieces in olive oil until browned. Add onion and garlic and cook util soft, about 2 minutes. Add corn and saute about 5 minutes. Add chicken broth and heavy cream. Bring just to a boil, then turn the heat down to med-low and simmer until thickened, about 15-20 minutes. Add butter and stir until melted. Sprinkle with salt and pepper to taste.
