This recipe was on the back of a glace cherry bag. I am hoping to get time to make it this year for Christmas. I love fruit cake! :)
Ingredients:
200 g glace cherries, mixed colours
125 g butter
75 g caster sugar
75 g brown sugar
2 eggs
2 tablespoons golden syrup
1 cup plain flour
1/4 cup self-rising flour
1/2 pinch salt
1/2 teaspoon mixed spice
1/4 teaspoon nutmeg
75 g raisins
125 g sultanas
125 g currants
30 g almonds, sliced
2 tablespoons sherry wine
Directions:
1. Combine fruit and nuts in a large bowl with sherry, cover and stand overnight.
2. Beat butter till soft, add sugars and beat till creamy.
3. Add eggs, one at a time, while still beating, then add golden syrup.
4. Add sifted flours and spices alternatively with fruit mixture and then mix till combined.
5. Grease and line a 20cm round tin.
6. Spread mixture evenly and bake for approximately 1 hour and 50 minutes in an oven set at 150°C.
