Chris Young's Tofu Dinner Salad

i have been working my way through all the soyboy recipes with my family because we are always looking for simple, healthy dishes that use tofu - this is simple, and easy to make, but so good.
Ingredients:
8 ounces soyboy tofu, sliced into 1/2-inch bricks (caribbean or tofu lin)
4 -6 cups baby greens
1 avocado, chopped
1/4 cup cucumber, sliced
2 carrots, grated
1 tomato, chopped
1 apple, chopped (optional)
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 teaspoon mustard powder
1 teaspoon honey
Directions:
1. Pan-fry the tofu in olive oil until barely brown on the edges.
2. Drain on paper towel and let cool.
3. Whisk together dressing ingredients in a small bowl.
4. Mix all of the salad ingredients together in a large bowl and top with the dressing.
