I have been making this chicken salad for years and haven't found one I like better yet.
Ingredients:
2 cups chicken breasts, without skin chopped
1/2 cup celery, chopped
3/8 cup green onion, sliced
2 hard-boiled eggs, chopped (optional)
1/4-1/2 cup low-fat mayonnaise
1/8-1/4 cup light sour cream
3/4 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon celery salt
1/4 teaspoon dry mustard
1/4 teaspoon paprika
Directions:
1. Mix all ingredients and chill.
