Chorizo With Prawns

One of my favourite ever Tapas dishes! delicious simple spanish food comida buena!!!
Ingredients:
• 2 tablespoons olive oil
• 2 sliced garlic gloves
• 300g/11oz chorizo cut diagonally into 1/2cm/1/4in thick slices
• pinch salt
• 8 king prawns (shell on)
• 50ml/2fl oz sherry (ideally dry sherry)
• generous amount of chopped flat leaf parsley leaves to serve
Directions:
1. • heat a frying pan until medium hot, add the olive oil and garlic and fry for 1-2 minutes. Add the chorizo and fry for a further 1-2 minutes.
2. • Add the sea salt and prawns and cook for 2-3 minutes, or until the prawns are just pink.
3. • Add the dry sherry and deglaze the pan.
4. Tip into a serving dish and sprinkle over the parsley.
