This is an easy mexican dish that doesn't take alot of time and has some good flavors to it.
Ingredients:
1/2 lb ground beef
1/2 lb fresh ground chorizo sausage (or if you can't find fresh chorizo use packaged cacique or el mexicano beef or pork chorizo saus)
1 small yellow onion, diced
1 bunch cilantro (rough chopped, no stems)
2 -3 roma tomatoes, seeded and diced
1 serrano chili, seeded and minced
salt
1 (8 ounce) package corn tortillas (fresh are better)
Directions:
1. 1. In a skillet brown ground beef and fresh chorizo together til cooked. Drain grease.{ If using the chorizo sausage, it will melt down and you can tell when it's done because it will look like little pieces of ground beef.).
2. 2. Take all the ingredients for pico and mix together in a bowl, add salt to liking.
3. 3. Warm tortillas on stove or tortilla warmer.
4. 4. Take meat mixture and spoon into the middle of the tortilla and top with the pico mixture. Enjoy! Also great if you can serve with spanish rice and beans!
