Chorizo Stuffed Chilies

These are mexican inspired stuffed peppers. The flavors are fantastic. Use as an appetizer or side dish.
Ingredients:
16 fresh red or green anaheim chilies
3/4 pound chorizo sausage
1 large clove garlic, minced
3/4 teaspoon ground cumin
1/2 teaspoon oregano
2 pounds fresh spinach, rinsed, drained and coarsely chopped
1/2 pound mushrooms, finely chopped
2 cups soft bread crumbs
1 cup shredded monterey jack cheese
1 egg, beaten
salt to taste
Directions:
1. Prepare stuffing:
2. In a wide frying pan, crumble the chorizo.
3. Add garlic,cumin and oregano.
4. Cook over medium-high heat, stirring frequently, until meat is browned. About 10 minutes.
5. Discard all but 2 tablespoons of fat.
6. Add spinach and mushrooms and cook.
7. Stir frequently and cook until the liquid has evaporated, about another 10 minutes.
8. Remove from heat and stir in soft bread crumbs, monterey jack chees, egg and salt to taste.
9. Set aside while preparing peppers.
10. Prepare chilies:
11. Wearing gloves, leave the stems on and split the chilies lengthwise.
12. Pull out seeds and ribs.
13. Fill chilies with stuffing.
14. Place side by side, stuffed side up, in a 10x15-inch rimmed pan.
15. Bake, uncovered, in a 400° until chiles are soft and lightly browned, about 25-30 minutes.
