Chorizo Quinoa And Vegetable Soup

This soup is really easy to make and turned out to be quite yummy and filling. I think you can change it up by adding beans, spinach, kale, other veggies, etc. The quinoa adds additional protein and fiber.
Ingredients:
2 chorizo sausages, casings removed
1-2 carrots, peeled and diced
2 celery stalks, diced
1 onion, diced
2 cloves garlic, minced
chili powder (optional -- i like it spicy)
1 potato, peeled and diced
1 bay leaf
6 cups chicken stock
half a cup of quinoa, rinsed through sieve until water runs clear
pepper
curly parsley, chopped
Directions:
1. Heat a little bit of olive oil in a dutch oven over medium heat. Add the first six ingredients. Saute for 8-10 minutes. Add stock, potato and bay leaf. Bring to boil, reduce heat and cook uncovered for 15 minutes. Add quinoa and parsley and cook for another 15 minutes. Season with salt and pepper.
