Chorizo En Sidra (Chorizo in Cider)

SPANISH TAPAS RECIPE: Cider is the beverage of choice in the Asturias, Galicia and Basque regions of Espana (Spain) and this dish is a favorite within these regions.
Ingredients:
3 tablespoons olive oil
1 small onion, minced
1 1/2 teaspoons sweet paprika (pimenton)
1/2 cup apple cider (alcoholic)
1/4 cup chicken stock
1 bay leaf
2 spanish chorizo, sliced diagonally (about 3/4 pound)
2 teaspoons sherry wine vinegar
2 teaspoons fresh parsley, minced
Directions:
1. Heat oil in saucepan over low heat, add the onion and cook for 6 minutes (until soft), stirring occasionally. Add the paprika and cook for 1 minute, stirring constantly.
2. Increase the heat to medium and add the cider, stock and bay leak to the pan and bring to a boil.
3. Reduce the heat and simmer for 5 minutes. Add the chorizo and simmer for 5 additional minutes.
4. Stir in the sherry vinegar and parsley. Season to taste and serve hot.
