I make mine hotter but this is a good starter recipe.
Ingredients:
1 lb ground lean pork
1 large onion
2 garlic cloves
1 jalapeno
1 teaspoon dried oregano (mexican if you can find it)
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon black pepper
1 1/2 teaspoons red pepper flakes
Directions:
1. Put everything except the pork in a food processor and puree.
2. Add 1/2 the pork, pulse, add remaining pork and pulse to mix well.
3. Remove and wrap in waxed paper, then plastic wrap.
4. I like to chill this for a day or two to let the spices do their thing!
5. Salt to taste-I like this with alot of salt however 1 to 1 and 1/2 teaspoons is a good start.
