Ingredients:
1 cucumber
2 small tomatoes
1/2 red onion
1/2 red pepper
4 sprigs parsley
olive oil
lemon juice
Directions:
1. Finely chop 1 peeled seedless cucumber, 2 small tomatoes, 1/2 small red onion, 1/2 red pepper. Dice 4 sprigs of parley. Mix in bowl and dress with either a 50/50 mix of olive oil and lemon juice.
