This super easy salad is quick and fun to make and tastes absolutely delicious. You can substitute or add any veggies or herbs you prefer to customize.
Ingredients:
1 tablespoon dijon mustard
2 tablespoons white wine vinegar
1 tablespoon apple cider vinegar
6 tablespoons olive oil
salt and pepper
1 red bell pepper
1 red onion
6 medium tomatoes
1/2 english cucumber
2 heads romaine lettuce
1 radicchio
1 cup italian parsley
1 cup basil
1 cup mint
6 ounces feta
Directions:
1. Prepare the dressing by mixing until combined mustard, olive oil, both vinegars and add salt and pepper to taste.
2. On large cutting board chop all the veggies into small 1/2 inch size pieces combining as you chop each item.
3. Slowly add dressing to vegetables and mix until the taste is perfect.
