Chocolate Zucchini Loaf

This is a favourite. Especially if someone gives you a zucchini from their garden. I make this once or twice while zucchini is local.
Ingredients:
2/3 cup raw sugar
1 cup vegetable oil
3 beaten eggs
2 1/2 cups grated zucchini
vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cocoa
1 cup walnuts (optional)
Directions:
1. Mix flour with baking soda, baking powder and salt with a fork.
2. Sprinkle cocoa powder into it with a sieve, if there are lumps.
3. Add sugar, oil and eggs.
4. Add vanilla.
5. Add grated zucchini and mix well.
6. Divide batter into two loaf pans, that are sprayed (and floured).
7. Bake about 50 minutes - one hour.
8. Let cool in pans for 10 minutes on rack.
