Chocolate Zucchini Loaf

A family favorite even among the most picky. A great way to hide those vegetables. I like to make these loaves in the winter as well. I freeze grated zucchini and then pull it out, thaw it, drain it, and make it as usual.
Ingredients:
2 1/2 cups flour
1/2 cup cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
3/4 cup margarine
4 eggs
2 teaspoons orange rind
2 cups of grated zucchini
1/2 cup milk
1 cup walnuts (optional)
1/2 cup shredded coconut
1 teaspoon vanilla
Directions:
1. Add all the ingredients from flour to cinnamon in one bowl.
2. Mix all the ingredients from sugar to vanilla together in a second bowl.
3. Combine two mixtures together just until mixture is moist.
4. Pour into two greased loaf pans.
5. Bake at 350°F for 1 hour.
