Chocolate Thumbprint Cookies

chunky, chocolatey and gooey all at the same time
Ingredients:
1/2 cup unsalted butter, at room temperature, diced
1/2 cup light brown sugar
1 egg
2/3 cup flour
1/4 cup cocoa powder
1/2 tsp baking soda
1 cup rolled oats
5 - 6 tsp chocolate frosting
Directions:
1. Preheat oven to 350 degrees
2. Grease a large baking sheet. IN a bowl, beat together the butter and sugar until creamy.
3. Using your hands, roll spoonfuls of the mixture into balls. Place the balls on the baking sheet, spacing thm well apart to allow room for spreading. Flatten slightly.
4. Dip a thumb in flour and press into the center of each cookie to make an indent. Bake cookies for 10 minutes. Leave for 2 minutes, then transfer to a wire rack to cool.
5. Spoon a little chocolate frosting into the center of each cookie.
