Chocolate Raspberry Mousse Cake

Berries or my fave esp when its mixed with chocolate . Use your fave cake base .
Ingredients:
mousse
2 1/4 c cream
1 /2 c sugar
1 tbsp instant expresso powder
6 oz chocolate , melted
1 1/2 c heavy cream , whipped
1 punnet fresh raspberries
ganache
2 c heavy cream
2 tbsp sugar
12 oz semisweet chocolate , chopped
4 oz unsweetened chocolate , chopped

Directions:
1. Mousse :
2. Whisk the cream , sugar and expresso powder until firm but not stiff peaks form .
3. Add the melted chocolate and cream .
4. Fold in the fresh raspberries.
5. Chill for an hour .
6. Ganache :
7. Heat the cream and sugar until hot until sugar dissloved .
8. Boil and pour over chopped chocolate .
9. Whisk until smooth.
10. Cake :
11. Spead the mousse between the layers .
12. Pour the ganache on top and sides evenly
13. Chill for 30 mins .
