Yep, it's Bill's recipe again. Yes, he's great at making desserts and has perfected the pie crust. (ah, but does he make the vodka crust yet?) This is pretty easy and usually very good and rich.
Ingredients:
a pie crust
2 oz unsweetened chhocolate
3 tbsp unsalted butter
3/4 cup firmly packed dark brown sugar
1 cup dark corn syrup
3 eggs, beaten
1 tbsp dark rum
1 cup coarsley chopped pecans
pinch salt
Directions:
1. Prepare or purchase a pie crust and set aside.
2. Melt the butter and chocolate in a double boiler.
3. Boil the sugar and corn syrup for 2 minutes to melt completely.
4. Let cool slightly;blend the chocolate and sugar mixtures together and wisk into the beaten eggs, whisking constantly to prevent the eggs from cooking.
5. Stir in the rum, pecans and salt.
6. Pour the filling into the pie crust.
7. Bake for 40 to 50 minutes, until filling is slightly firm.
8. Remove and let cool.
9. Serve at room temperature with whipped cream or ice cream.
