A holiday tradition at our house, and we often double the recipe. Rolling out the balls is a little time-consuming, but a great job to put your teenagers onto! Do not try to dip the balls in the chocolate on a rainy or very humid day, as the chocolate will not be smooth and cooperative!
Ingredients:
2 lbs powdered sugar
1 cup graham cracker crumbs
1/2 cup peanut butter
7 ounces frozen coconut
1 cup pecans, chopped
1 teaspoon vanilla
1 cup butter
1 (6 ounce) package chocolate chips
1 ounce paraffin wax
Directions:
1. Line 2 or 3 cookie sheets with waxed paper.
2. Melt butter in microwave.
3. Mix all ingredients together in a large bowl.
4. Form into small balls (about 1/2 the size of a golf ball) and place onto cookie sheets.
5. Chop paraffin wax into small bits and place in double boiler with chocolate chips.
6. When chocolate and paraffin are melted, dip balls in to cover and then place back onto waxed paper to cool.
