Chocolate Oatmeal Muffins

I started making these for breakfast this morning using Old Fashioned Oatmeal Muffin, but made some major substitutions, so I thought I'd post my version here. My kids and I loved these rich, moist muffins!
Ingredients:
1 cup old fashioned oats
1 cup almond milk
2 teaspoons cider vinegar
1/3 cup margarine or 1/3 cup vegetable shortening
3 tablespoons sugar
3 tablespoons cocoa powder
1 tablespoon molasses
1/4 cup applesauce (or 1 1/2 tsp ener-g egg replacer plus 2 t water)
1/2 cup all-purpose flour
1/2 cup spelt flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
Directions:
1. Mix together almond milk and vinegar, and pour over oats. Cover and let soak for about an hour.
2. In a separate bowl, beat together margarine, sugar, molasses and apple sauce. Fold into oats.
3. In a separate bowl, whisk together cocoa powder, flours, baking powder, baking soda, and salt until well blended.
4. Pour oat mixture into flour mixture and stir gently until well combined.
5. Spoon batter into lined muffin tin.
6. Bake in 400 F for 20-25 minutes.
