Directions:

  1. Preheat oven to 350F. Place parchment paper onto cookie sheets. Let margarine warm up to room temperature (I put it on top of the oven to speed the process!), but do NOT microwave it! It should be creamy, not liquid.
  2. Cream margarine, brown sugar, egg and vanilla together.
  3. Add the flour, baking soda, rolled oats, and salt. Mix well.
  4. Add the 'add-ins': chocolate chips, raisins, or whatever you're tossing in.
  5. Drop by rounded tablespoons onto the cookie sheets, approximately 2 inches apart. Bake for 8-12 minutes. (I usually end up with about 9 minutes for a nice chewy cookie.)
  6. Remove to a wire rack and let cool 2 minutes, then remove cookies to a cut-open brown paper bag on the counter (to absorb grease.. yuck, but it works). Let cool completely before storing.
