This is a fantastic and very rich, yet very elegant and very impressive cheesecake good enough to serve guests that you want to make an impression on. This recipe comes from my Aunt Barbara's collection. She perfected this cheesecake several years ago after several altecations. Read more . Ingredients:
1-1/2 cups crushed chocolate sandwich cookies
2 tablespoons butter melted
32 ounces cream cheese softened
1 cup granulated sugar
2 tablespoons flour
1 teaspoon vanilla
8 squares semisweet baking chocolate melted and cooled slightly
1/4 cup hazelnut liqueur
4 eggs
1 tablespoon sifted powdered sugar
1/3 cup mixed berries
Directions:
1. Preheat oven to 325 then mix crumbs and butter and press firmly into bottom of spring form pan.
2. Bake 10 minutes then remove from oven and set aside to cool.
3. Beat cheese, sugar, flour and vanilla with electric mixer on medium speed until well blended.
4. Add melted chocolate and liqueur then mix well.
5. Add eggs 1 at a time mixing on low after each addition just until blended then pour over crust.
6. Bake 55 minutes then run knife around rim of pan to loosen cake and cool before removing rim.
7. Refrigerate 4 hours or overnight then top with powdered sugar and berries just before serving.
