This is a very creamy, very tasty cheesecake that I obtained from an estate sale several years ago. This is a highly requested recipe amongst my friends. Decadent
Ingredients:
1 cup chocolate wafer crumbs
3 tablespoons butter melted
2 tablespoons sugar
24 ounces cream cheese softened
2/3 cup sugar
3 large eggs
1 cup mint chocolate chips melted
1 teaspoon vanilla
3 large egg whites
7 ounces marshmallow crème
Directions:
1. Combine crumbs, butter and sugar then press into bottom of spring form pan.
2. Bake at 350 for 10 minutes.
3. Combine cream cheese and sugar and mix at medium speed until well blended.
4. Add eggs one at a time mixing well after each addition.
5. Blend in melted mint chocolate and vanilla then pour over crust.
6. Bake at 350 for 50 minutes.
7. Loosen cake from rim of pan and cool before removing rim of pan.
8. Chill.
9. Beat egg whites until soft peaks form.
10. Gradually add marshmallow crème beating until stiff peaks form.
11. Carefully spread over top of cheesecake to seal.
12. Bake at 450 for 4 minutes or until lightly browned.
