Chocolate Mashed Potato Cake

As always, servings depend on the size of the serving and the appetite of the served. What a great way to use up those leftover mashed potatoes - too many to toss and too few to have another meal.
Ingredients:
1 cup sugar
1/2 cup margarine
2 eggs, beaten
1 cup cold mashed potatoes
4 tbsp. cocoa
1 tsp cinnamon
1 tsp nutmeg
2 cups sifted flour
2 tsp baking soda
1/3 cup buttermilk
1 tsp vanilla (real or imitation)
1/2 cup walnuts, chopped
1/2 cup raisins
Directions:
1. Cream sugar and margarine; then beat in eggs and potatoes.
2. Combine all dry ingredients and add them to the potato mixture.
3. Add the buttermilk and the vanilla. Stir together.
4. Add the nuts and raisins, stirring.
5. Bake in a preheated 350 degree oven for 45 minutes (9x13 pan) or a bit longer if using a tube pan. I prefer this; it takes a little longer in the oven, but it's very moist and is easier to serve, I think.
6. Serve plain. (I prefer a dusting of powdered sugar on top.)
