Ingredients:
1/2 cup shortening
1 cup brown sugar, packed
1 egg
3 (1 ounce) unsweetened chocolate squares, melted and cooled
1/4 cup strong brewed coffee
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
1/3 cup flaked coconut
1.5 (1 1/2 ounce) unsweetened chocolate squares, melted and cooled
1/4 cup sour cream
1 tablespoon butter, softened
1 -1 1/2 cup confectioners' sugar
2/3 cup flaked coconut
Directions:
1. in a mixing bowl, cream shortening and sugar.
2. add egg, chocolate and coffee.
3. mix well.
4. combine the flour, baking soda and salt.
5. add to creamed mixture, alternately with buttermilk.
6. stir in coconut.
7. drop by tablespoonfuls, 2 inches apart onto greased baking sheets.
8. bake at 375 degrees for 12-15 minutes or until edges are browned.
9. remove to wire racks to cool.
10. .for frosting, combine the chocolate, sour cream and butter in a small mixing bowl.
11. add enough of the confectioners' sugar to achieve the desired spreading consistency.
12. frost cooled cookies.
13. sprinkle with coconut.
