Chocolate Ice Milk Sundae

creamy ice milk with a mocha flavor
Ingredients:
3/4 cup superfine sugar
2/3 cup superfine sugar
2/3 cup unsweetened cocoa powder, separated
2 cups cold 1% milk
1 1/2 tsp vanilla extract, divided
3/4 cup strong coffee or espresso
Directions:
1. In a large bowl whisk together 3/2 cup sugar and 1/3 cup cocoa. Slowly whisk in milk and 1/2 tsp vanilla until dry ingredients are dissolved and no lumps remain.
2. Pour into 8x8 baking pan. Freeze for 1 1/2 hours.
3. Score the surface with a sharp knife and cut into chunks. Transfer to a food processor and blend until smooth and creamy.
4. Pour into resealable container. Freeze for 2 to 3 hours or until firm.
5. In a small saucepan combine remaining sugar and cocoa. Stir in coffee. Bring to boil over medium heat, stirring. Reduce heat and cook 8 minutes or until slightly thickened. Let cool and stir in the remaining vanilla extract. Serve over ice milk.
