CHOCOLATE COVERED LOG COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Trevor Estate in Rockwall, Texas in 1997.
Ingredients:
1 cup unsalted butter softened
1 cup granulated sugar
2 large eggs at room temperature
1-1/2 teaspoons grated orange peel
1 teaspoon vanilla extract
3-1/4 cups all purpose flour
12 ounces semisweet chocolate melted
1 cup pecans finely chopped
Directions:
1. Preheat oven to 350
2. In large bowl cream butter until smooth.
3. Gradually beat in sugar and cream until fluffy then beat in eggs one at a time.
4. Stir in grated orange peel and vanilla extract until well combined.
5. Gradually add flour until blended.
6. Make a ball with the dough then flatten and wrap in plastic and place in refrigerator 1 hour.
7. Remove dough from refrigerator and let soften 10 minutes.
8. Taking small pieces of dough roll into balls and then 3 logs.
9. Place logs onto ungreased cookie sheets leaving several inches between for expansion.
10. Bake 10 minutes then cook on sheets for 1 minute and remove to rack and cool completely.
11. Meanwhile melt the chocolate.
12. When cookies have cooled 15 minutes dip them halfway in chocolate then roll in nuts.
13. Allow them to set 15 minutes before serving.
