My grandma loved chocolate covered cherries. A couple of Christmases my mom and I made my grandma chocolate covered cherries and this is the recipe we used. These do not get gooey in the center like store bought cherries but because of that they are easier to put together. I also like this recipe better than others I've seen because it uses a whole can of evaporate milk... I hate being left with open cans of stuff. If needed you can use a little bit of shortening or parrafin to help coat the cherries. You may not have to use all of the powdered sugar and chocolate, but it is better to be prepared.
Ingredients:
8 tablespoons unsalted butter, softened
6 tablespoons light corn syrup
1 (12 ounce) can evaporated milk
1 teaspoon vanilla
1/4 teaspoon almond extract
50 maraschino cherries, drained
3 lbs powdered sugar
1 1/2 lbs semisweet chocolate
Directions:
1. In a large mixing bowl beat together butter, corn syrup, milk and extracts. Slowly beat in the powdered sugar until a dough forms that you can easily shape into small balls. Coat your hands with powdered sugar to prevent dough from sticking and form 50 small balls.
2. Press your thumb into the center of a dough ball to create an indentation and gently press a cherry inside and pinch the dough to close around the cherry; roll on nonstick surface to reshape into a ball so that the cherry is completely covered. Repeat until done.
3. Using a double boiler melt the chocolate and dip candies. Lay the candies on cookie sheets lined with wax paper until the chocolate is set and then stick in the freezer for about an hour.
